Dark Chocolate & Blueberry Muffins | Baking Recipe

Super easy recipe and extremely moreish!


Ingredients

(makes 12)

  • 130 g caster sugar

  • 2 large eggs

  • 250 g plain flour

  • 100 g soft butter

  • 140 g natural yoghurt

  • 1 tbsp vanilla extract

  • 2 tsp baking powder

  • 75 g blueberries

  • 50 g dark chocolate

Instructions

  1. Preheat the oven to 400ºF/200ºC/Gas Mark 6

  2. Line baking tin with 12 greaseproof muffin cases

  3. Beat butter and sugar together until light and fluffy

  4. Gradually add eggs and continue to beat

  5. Add yoghurt and vanilla until combined (avoid over-mixing here)

  6. Gently fold in blueberries and dark chocolate

  7. Evenly distribute the mixture in muffin cases and place in the oven

  8. Bake for 5mins at 400ºF/200ºC/Gas Mark 6 then reduce to 350F/177ºC/Gas Mark 4 & bake for 15-20mins
