Easy Vegan Crêpes Recipe with Melted Chocolate & Raspberries

Makes 2 crêpes.


Ingredients

  • 1 cup of plain flour

  • 1 1/8 cup of almond milk

  • 1 tsp caster sugar

  • 1 tsp vanilla essence

  • 1/2 tsp cinnamon

  • 1 tsp of olive oil

  • 1/4 bar of dark chocolate

  • Frozen or fresh raspberries or any berries of your choice

Instructions

  1. Mix flour, milk, sugar, vanilla and cinnamon together until the mixture is smooth and with no signs of lumps.

  2. Over medium heat add olive oil to a non-stick crepe/pancake pan then use a paper towel to spread it around and wipe up the excess. There should be no visible signs of oil on the pan

  3. Pour the mixture onto the pan forming a thin layer and cook on both sides - you'll know when to flip with the edges are easy to lift up

  4. To serve, melt chocolate in microwave, drizzle on top and then add your berries.
