Ricotta Smashed Avocado & Scrambled Eggs Toast Breakfast Recipe

A must try! This loaded toast has it all.


  • 1 slice of sourdough bread

  • Ricotta

  • 2 eggs

  • Olive oil

  • 1 Avocado

  • 1 tsp of lemon juice

  • 1 tsp honey

  • Fresh thyme

  • Salt

  • Pepper

  • Chilli flakes


  1. Start by toasting the bread

  2. In a bowl, smash the avocado and add honey, and lemon juice and mix in

  3. Spread the ricotta over the toasted bread

  4. Then spread the avocado mixture on top of the ricotta

  5. In a bowl beat two eggs and add to a frying pan with a coating of oil to scramble the eggs

  6. Once eggs are cooked, add the eggs to the toast

  7. To finish, add salt, pepper, chilli flakes and fresh thyme
