Sweet Potato Stuffed with Smashed Avocado, Asparagus and Vegan Bacon | Vegan Recipes

This is a quick healthy breakfast combination that is both plant-based and tasty. Stuffed with avocado, you can get as creative as you like with the toppings. In my case, I went with the 'more is more' mantra.






Ingredients

  • 1 whole sweet potato

  • 1 small avocado

  • 1 avocado

  • 2-3 asparagus

  • 1 strip of vegan bacon

  • Fresh parsley

  • A pinch of sea salt

  • Olive oil

  • A dressing/sauce of your choice


Instructions

  1. Preheat the oven to 400ºF/200ºC/Gas Mark 6

  2. Wash the sweet potato and use a fork to poke 1inch holes into it, all over

  3. Place in the oven and bake for 25mins or until it's fully cooked

  4. Cook the asparagus in a pot of water for 3-5mins

  5. Pan-fry the vegan bacon evenly on both side and then chop into small pieces

  6. Smash the avocado in a bowl and add a pinch of salt

  7. Once the sweet potato has been cooked, make a slit at the top no deeper than 3/4 of the way down

  8. Then stuff the sweet potato with the avocado, asparagus and vegan bacon

  9. To finish, add chopped parsley and dressing.
